The first night, I did nothing more than have a glass of wine at Faust Wine Cellar, located under the Dominican cloister that houses the Hilton Budapest Hotel in the Buda Castle complex. But my 1,050-forint glass of kadarka (a Hungarian red grape) came with the one-on-one services of Gabor Nagy, an owner and the sommelier, who practically wouldn’t leave the table.
